I've tried a few different recipes for McCormick extract root beer (drinking one now, as I type!), and am prepping to make a gallon of root beer tonight. I picked up Rainbow root beer extract from my local wine making shop. I wanted to know if folks here had a favorite recipe for it?

I'll be making one gallon. I will use Ale yeast for carb'ing. I'm thinking one gallon water, 2 cups sugar (1 cup cane sugar, 3/4 cup brown sugar, 1/4 cup clover honey? haven't decided on the ratios - or just straight cane sugar).

Haven't decided if I need to add vanilla extract, or possibly anise extract (that would require a run to the store).

So - anyone have a favorite recipe for rainbow extract root beer? Just make it straight, or blend things in? I don't go for overly spicy (like Virgil's), but I do like some nice blended flavors. I'm kind of a Dog 'n Sud's fan (think creamy, smooth, post '60's root beer).

I'll use two tablespoons of extract, making a double rainbow! I'll say the appropriate wow's as I pour (now to look for that goofy youtube clip)

I have made a Gnome version (fairly similar) using 2/3 cups sugar, 2/3 cups brown sugar, and a little more than 1/2 cup honey with 1 T. of vanilla extract (or 2/3 real bean). This seems to be a great ratio with strong, but excellent flavor and better body.

Let me know how it goes.
