Getting ready to bottle a Sweet Potato Farmhouse Ale batch ( substituted pumpkin for the sweet potatoes).
It is a knock off of a brew by Big Alice Brewing in Queens, NYC. No post-bottling instructions in recipe.
Question: How long after bottling can we drink ? I would like bottle tomorrow or next day and Ideally would like to open 3 bottles on thanksgiving day which is 8 days after. thanks
 
If you can bottle one in plastic, it will help monitor the carbing progress. Setting in a 70F+ space will help.

After 8 days, it may not be fully carbed (or fully matured), but it should at least be drinkable.
 
Bottle asap, store at or above 70f and hope for the best. You should have a hiss and some fizz when you open but the CO2 may not be fully incorporated in the liquid. Expect very little head retention and a lightly carbonated beer.

Not gonna be carbed unfortunately, its a very nice wish/dream but not going to be what you expect or desire. Toughest lesson in brewing is time doesn't speed up or slow down because we want it to.
