Nice! Can you describe how it's developing over years?
Unfortunately, I cannot. It was the only time I've had it. Here were my notes from my untappd checkin:
"First sip was acidic strawberry juice. As it opened up, more funk, vinegar, strawberry and raisins. Very complex. Damn good for 16yrs old"
I do recall that it was void of any weird off-flavors. Was very impressed at the quality, for how old it was.

Had a sante 2 (from 1999) from etre a couple years back and it was outstanding. Tasted like a mix of lambic and cider. Nothing off putting in anyway. I'd imagine it's a gamble with any of those old ones, but if you get a good one it's totally worth it.
 
Anyone have info on the Silencieuse series? What's it commemorating, what's the flavor profile, where'd they release? Particularly interested in this bottle the "La Belge" variant (pictured below) which appears to be the 15th out of the series, if that tells us anything (label pics for the whole series are here https://www.jacquestrifin.be/variantes2010/brasserie_fantome4-182.php)

I wish I could communicate with the owner of that site to see what they know. I also have several bottles/labels not pictured on that site they could add.

I cant seem to find it again but I want to say that years ago I thought I looked into this more and it was done for a reocurring play/drama/theater? My memory is getting foggy, I could be completely wrong.

Man I love those websites with the huge lists of all those 'tomes. A bottle of 2000 "Deep Winter" would really hit the spot right now.

Jester King version of Del Rey. Self reported for not being Fantome brewed but I thought it was very interesting and worth a post. Mild acidity, fruit juice funk, oily black pepper, dark candy sugar. Didn't know this was a barrel aged blend either. ISO the Fantome version!
 
Might as well ask about this Fantome Rucola Tour d'Italie 2006? Anyone opened one lately, or know anything about it other than it commemorates what I assume is an Italian Bike Race in 2006? danyP

yes the Tour d Italie was going through the village Hotton 5 km from here and i have had a Stand there for this event ..
Rucola xas "preconisé "by a italian friend at this moment ..
 
Hi, quite new here...and I love Fantomes. Saw some Santés for sale on Être lately, but they were quite old (2009, 2005, 2003, if I remember well), and expensive (over 50 dollars a bottle). The website stated they're not drinkable...is that just a regulatory thing (some disclaimer, not willing to take responsibility if it turns out they taste badly?), or are they really not drinkable? And if they're not drinkable: who's willing to buy such an expensive non-drinkable bottle?
hel!! there are collection Bottles ..i cannto be sure these still be good ! .. better is to buy new bottles ...i thing ! only great tasters can really get a rating to so OLd botltes ... it's so even with great wines ....

Just opened this one a friend gave me, had a bit of crust around the neck/cap area, no cork. This one may have a bit of oxidation, but its quite pleasant. Fairly slick on the tongue, carbonation is lively, kinda creamy. Flavor of spiced apples, vanilla, earthy damp leaves. Aroma that is reminiscent of JW Lees Harvest bottles, fruity (oxidation?) Leathery, and traces of caramel. Cum/10

This is what I believe to be one of the most majestic attributes of Fantome.

I’ll never forget the first time I sat down with a tome, ripped the cork out with a violent POP and the liquid just sat there in the bottle with not a single visible indication of carbonation. Almost as if the carbonation itself loved being in the solution so much that it didnt want to come out.

But then as your pour it into your glass, it unwillingly breaks its bond with the ghost.
