Thought it would be a dud and had thoughts of terrible Anchor Christmas vintages that were like fellating an aging noble fir.


But this was stellar. Low carbonation, more funk than spice which was a nice surprise. Bit of sweetness from the addition of peppermint bark and yeah I got nothing else.

My thoughts on this are similar to those of stakem back on page 28. This beer was perplexing yet extremely enjoyable, and I was upset with myself for having not ordered more. It smelled like a pile of tobacco and fresh fruit. It tasted like English mild, black tea, something fruity (but not sweet), probably some other stuff. It's a tough beer to put into words. It's an odd one. I can see this not being everyone's cup of tea PUN* DEFINITELY INTENDED. Alright I'm done.

*Edit: maybe not the best use of the word 'pun'. It's definitely some kind of ****** word play.

Fantome is a must visit. I did it last year. It was about an hour drive from Brussels. I got there in the afternoon, spent a few hours at the brewery (tour, talking with Dany/Val, taproom drinks, buying way too many bottles, sobering up for the drive back, etc.).

I got back to Brussels that evening. You should be able to get back to Brussels for a reasonably timed dinner. But I would plan on the trip eating up a good portion of the day.

The brewery is out in the country. I'm not sure about activities in the surrounding area. Make sure you communicate with Dany in the run up to your visit to find a time that works.

thnaks for this good description.. i hope this year another brew with Mike James... also with Daniel Fernandez, Shaun Hill, Joe Grimm ... Garret no more on place for a Del Rey, but ... why not a Ft Multiple Sciences ! :)

Holiday Fantome Consumption Roundup

I got lightly ghosted this holiday season with the following bottles:

I think this was a 2014 bottle. I don't know if imperial Belgian pale ale is an accepted style, but that's certainly what this tasted like.

2002/2003ish. The oldest tome I've had the pleasure of tasting. It delivered on all fronts. Beautiful color. Perfect carb. Nice dry finish. It wasn't really funky or sour at all. Instead, it was very subtle and delicate. No adverse effects from the age.

I think this was also a 2014. I've had several bottles from this batch and they've all been great. The carb was very lively but it didn't reach explosive levels.
 
Found a solid Fantome stash in KC this past weekend. Unfortunately some of the bottles were under a vent and warm to the touch, plus a quick freeze in my trunk. If anything I need to drink them soon to see how they're doing!

First time having Coffee Ruby "very bitter taste." This bottle gushed when it froze and then lost about a third of it's contents. Aqueous mouthfeel (my fault). Big peppery almost poblano type bite, some coffee bean, vinegary red wine, mild chocolate malts, some Fantome fruit funk. Very solid, despite freezing.

2014 Noel from a few weeks ago. Aroma of holiday fruit basket (orange flesh and spices). Some tome' funk. Taste is heavy clove and black pepper. Very good. Will definitely buy again.

Forest Ghost Blond also from a few weeks ago. Floral spices, Triple fruitiness and sweetness, that phat Fantôme fruit juice funk, just a bit of heat on the finish. CRUSH.
 
Finally experienced my first Tome gusher. I thought I was gentle with this bottle and took it easy taking out the cork. Went off like a rocket all over my counter, wall and floor.

This is all I got from the bottle. Delicious.

any idea on the year? Printemps seems to do that when not chilled, 15 is the most explosive, hit my ceiling

Wine country has some $10 Tomes at the moment. Picked up a Hiver and a Pissenlit yesterday
 
Hi, quite new here...and I love Fantomes. Saw some Santés for sale on Être lately, but they were quite old (2009, 2005, 2003, if I remember well), and expensive (over 50 dollars a bottle). The website stated they're not drinkable...is that just a regulatory thing (some disclaimer, not willing to take responsibility if it turns out they taste badly?), or are they really not drinkable? And if they're not drinkable: who's willing to buy such an expensive non-drinkable bottle?

Regulatory. The Sante series is fun to do with a bunch of friends.
 
Thanks! My friends are not really into it, sadly.
Then id suggest just getting yourself one bottle to enjoy yourself and decide if you think it was "worth it" to get another at a later date. Those santes have been on the site for years, I doubt they will all disappear anytime soon.

I had a Santé 5 back in August. It was very very drinkable.
