I just picked up a used 15G Spike kettle with a false bottom. In my old kettle I would whirlpool and use a side pickup after using my immersion chiller to transfer to the fermenter.

Now that I have a false bottom - should I use it, still whirlpool or will everything settle through - still planning on the side pickup.

It may form a hop cone one the bottom of your kettle if your pump is strong. I have the same setup And I just manually churn up the wort against the flow and side to side to make sure the hops are all suspended in the sweet wort. Not sure if it matters much but my thinking is more surface area when hops are suspended vs a pile on the bottom of the kettle.
