Soon enough it will be time to start brewing a fall beer, but wanted to do something unique so I am thinking about a rustic play on a saison. My first thought was obviously a pretty heavy dose of rye, maybe up to 25%. Here's what I plugged into beersmith:

3G BIAB

6 lb Pils
2 lb Rye

1 oz styrian goldings (60)
.5 oz styrian goldings (10)

Wyeast 3711

This will be my 2nd BIAB batch, was going to mash for an hour at 152.

What do you guys think? Anyone have any fun ideas to make this a great October/November bonfire beer?

Looks pretty straightforward. Don't see any need to get complicated with this one.
 
I would mash at 148º for 90 minutes and pick any other saison strain over 3711. Grain bills looks good.
 
This is very close to something we brewed that we just kicked. The 3711 is the perfect strain for this; it will ferment it bone dry, and its flavour components play very nicely with the rye. It acquired a sort of woody quality that was just great.
