How do I get the conversion from extract to all grain for these two extracts please help
 
At 75% efficiency, you get about 27 points/lb.gal. (ppg) from grain. DME is 47 ppg, and LME is 36 ppg.

Using the numbers posted above (which are pretty close to what I use) gives-

9# of DME x 47ppg = 423
11# LME x 36ppg = 396

423 / 27 ppg = 15.7# total grains
396 / 27 ppg = 14.7# total grains

As to which grains, you really need to specify which brand since each malster uses different specialty grains and different amounts to create their dark extracts. Even then, they often tell you which malts are used, but not at what percentage. Briess dark DME is made from mostly american 2-row pale, very small amounts of crystal 60L and munich, and a tiny bit of black barley. Beersmith and other programs have conversion calculators that will get you pretty close. You can also use beersmith or similar programs to play with the specialty additions until the SRM matches what the maltser has listed for the extract.
 
Perhaps a better way is to tell us what kind of beer you are shooting towards and let us help you make up a grain bill that will approximate that beer.
 
Ok I was gonna do a dark stout almost like an imperial but I started reading more into the ingredients an I found that I don't like licorice but I have another question for y'all this other recipe calls for chocolate and orange peels, Ginger root, cinnamon, cloves, nutmeg what type would I use and would just store bought work for it
 
As for chocolatge you definately don't want to use bars of chocolate or bakers chocolate because they contain fats that will eliminate the head on the beer. I suggest powdered cocoa or something similar. I've not worked with spices in beer too much, but do know that the strength varies a lot. You might find these articles helpful:

the usual quoted conversion is 1lb grain = 0.75lb LME = 0.6lb DME, its dependent on your efficiency, but it works relatively well.

btw, that sounds like way too many spices to add to one beer.

I'd stay clear of any recipe that uses large amounts of dark extract, because one manufacture's dark extract could be very different than another's. You also have no way of converting dark extract to an all grain equivalent.
If you use light extract and steeping grains, you have already been given ways of accurately translating the recipe to AG as light extract can be replaced by pale malt.

That doesn't sound like any kind of stout that I've brewed. I use pale malt, flaked barley, roast barley, hops and yeast.

I know that you can get the answer from one of the members here pretty easily, but if you are making the step up to all grain or partial, the beersmith software is well worth the 20 bucks. Great product
