I'm new to brewing and I brewed my second batch today. Both times I have boiled 6 gal to end up with 5 gal. My question is both kits recipes tell you to boil I think 2 1/2 for the full 60 min then top off the fermenter with cold water. My question is how does doing a full boil when the recipe is designed for a partial boil effect the hops in your beer? Thanks.
 
When you boil full volume vs. a concentrated boil, you get higher hop utilization, so if you don't cut back on the hops, you'll get a hoppier beer than the recipe intended. There are hop utilization calculators on the web, but I can't point you to them, as I use BeerSmith software for my calculations.
