So I want to make a honey wheat Lager. I have ordered the Coopers Lager, Wheat Malt Extract, and their Brew Enhancer 2. I plan to mix in 24 ounces of orange blossom honey. Should I ferment this beer in the primary fermentor for 2 weeks then bottle condition for 4 weeks? Any thoughts or suggestions? I appreciate the help.

Cheers!

Personally, I have had good results adding the honey late, like 1-2 days after primary fermentation has subsided. I have racked on to it and just added it to the primary, both with good results. I've also added the honey straight out of the bottle and added it after heating it to 170F for 20 minutes. I've not tried boiling the honey, but may in the future. My understanding is if you add it to the boil, it mostly contributes to the alcohol content, and little to flavor.

Never mind instructions regarding ferment times with cooper's. 2 weeks may or may not be enough. My 1st,a cooper's OS lager, was done in 12 days. But you can't count on that. Especially with a lot of honey being added. It may take up to 3 weeks to hit FG. most of my cooper's based ales take that long, even with small starters, since I add 3lbs of plain DME's.
