I ended up re pitching yeast into my wort after 2 days of nothing. Now my wort is definitly fermenting.

I would like to know what would using more then the reccomended yeast do to a beer? Change in flavor, more or less ALC etc.

You probably won't notice much of an effect. It's much harder to overpitch than it is to underpitch.

If anything, the higher quantity of yeast will mean less overall yeast reproduction, which is an important process in developing the full flavor profile that a given strain brings to the beer. The ABV is determined by the amount of fermentable sugar in the beer, not by the amount of yeast.
 
In many cases, the amount of viable yeast in a package you buy from LHBS is less than what is on the bag/tube label. It is possible that even with two packages of yeast, you still could have stood to have more, at least to an optimal level.

You didn't hurt anything, most definitely.
