I just got a new kit delivered today. It comes with 6.5# of pale LME and 1/2 # of wheat LME. (OSH clone from AHS)

I'm gonna brew it as it comes, but was wondering what differences/additions that the wheat adds to the beer.
I'm sure it affects flavor to a certain degree, but how about body, mouthfeel, head retention, etc?

What if the wheat extract was replaced with more pale? or if it where 5# pale and 2# of wheat?

Wheat malt can have a few effects on beer. One is that it provides a fuller mouthfeel to the beer. Also, wheat malt helps to improve head retention and this is why it is often included in beers like Pale Ales in small amounts (1-5%). At these low amounts it won't have a significant effect on flavor or clarity, but will help give you a nice head that will last longer.
