EdWort's Apfelwine noob question

So I made my first EdWort's Apfelwine four weeks ago. I only made about 3 gallons of it to try it out (also I just had a 3 gallon fermenter available). However, I used the entire packet of yeast. Is this okay??

I did a taste test when I was bottling. It was very dry and had some sweetness in the background. It didn't clear fully and has a slight haze. Was this because I used an entire packet?

Not a problem.

Totally inconsequential.

I've made it a couple of times. Takes about 2 months to clear but it does drop gin clear.
