Hi! First forum post/question,

I couldn't find this anywhere so I figured I should ask the people. I recently bought High Gravity Brewing's 120V EBIAB system:

The bayou classic 44qt has headspace during the mash between the bottom of the kettle and the bottom of the basket insert. Should my mash tun volume be the volume of the basket or should I just avoid high gravity beers so I don't spill over?

With my Ebiab I put in the weight and size of the kettle into the software.

I also accounted for how high my volume would be when adding water and grains.

My suggestion is to use something like the priceless calculator to see what the volume is with grains and water to see if it'll spill over. That way you'll know if you can do high gravity brews on a full volume no sparge. Is that what you're doing...full volume no sparge?

The correct term is actually deadspace since it's on the bottom (headspace is air above the liquid).

Your mash tun volume includes the deadspace, because water will fill it. I have the same kettle/basket although I don't use the basket.

The simple formula to figure out how much room you need is:

Required Volume = GallonsOfWater + (0.08 x LbsOfGrain)

I didn't even realize this. I'll have to put the deadspace into mine and see what it changes.

Do you use propane? I've considered not using the basket but I have the boil coil and didn't know if it would melt my bag on contact.
 
I have used propane but not for a pretty long time. I use an induction cooktop. I have also used an electric element in the mash (ultra low watt density).
