My pump wouldn't spin yesterday (March 805s). It has a plastic pump head. I know I can take it apart, but Are there any pump heads out there designed to be taken apart repetitively for cleaning?

Yes, real sanitary pumps are specifically designed for ease of taking apart for cleaning. Non threaded impellers that can be removed without a tool a pin holds them in place. Tri-Clamp fittings on inlet and outlet, Tri Clamp fitting around the casing.

Tri clamp no tool casing. Sounds perfect. Coming up empty on Google though...

Your not going to like the price if you do pind something.
Taking apart a march is 4 bolts? Not much more than a triclamp if you have QD on the inlet/outlet. Do you flush/clean your pump out after use?

I guess I am mainly worried about losing seal and stripping out plastic threading. Though I guess I could always silicone it and drill out the holes and put some bolts on it.

Curious about something after looking at pumps. What application would one opt for in-line vs. Center inlet?

Google Tri-Clover C114MD56T-S

A lot bigger and more expensive than you will need. Someone really does need to make a decent sanitary smaller beer pump in stainless with clamp fittings.
