Easy banana?

Ok so I've made 2 extract brews so far, coopers Australian lager and coopers Mexican cerveza. Now what I really want to make is a banana beer!

I've read all about the different recipes but not sure I'm confident to start from scratch. Does anyone know of a way to add banana flavour to extract kits? Was thinking maybe make a banana 'tea' to replace some or all of the water?

I'd prefer to get the taste of real banana's rather than flavouring if I can, also from selecting the right yeast to give off banana flavours.

I don't know anything about banana tea, but hefeweizen yeast fermented on the warmer end of the temp range can yield some pretty nice banana flavors.
 
By banana tea I just mean boiling bananas in water to try and get some of the flavour out of them, what strength flavour could I expect from yeast alone? I'm aiming for a banana after taste like the wells version :)

Boiling fruit can also lead to you extracting tannins as well as flavors. Another option might be to freeze the bananas beforehand, then thaw and puree them, and rack onto them in the secondary. OR Make a hefeweizen, ferment it warm, and put the pureed bananas in after a week, then bottle after two total weeks in primary.
Since Hefe banana flavor is from yeast, not using a secondary will give more of that flavor, plus the banana itself.
 
You can get some pretty good banana flavors by using a Belgian strain that produces a lot of esters.


Yes Belgians can be banana as well. I use white labs Trappist ale and ferment at around 62 and it has a decent banana clove taste.

You can add fresh bananas to the boil, just mash them first and let them sit for a couple hours to let the starches break down some, then add them in the last 15 minutes of the boil.
 
Want to do the same thing. Looking into a dunklewiezen and doing a mini mash with the grains and banana, to extract the flavors, then continuing with the extract kit? I thought the dunklewiezen would get me closer to that bready banana bread beer flavor. Thoughts?

Most people say about a pound per gallon. A little more or a littles less, depending on how much flavor you want. I put a half gallon of porter wheat on 2 bananas in secondary for 4 days and it tasted great. Now I wish I would have done a much larger batch...
