So I was enjoying my first Saison Dupont, I fell in love and boiled up some extract, dumped it in a sanitized jar, let it cool and dumped the last half inch of beer into the jar. I know this yeast is available commercially but I figured why not.
So two days later, there's about a quarter inch of sediment at the bottom, I never noticed any fermentation (though I wasn't looking). I took the lid off and gave it a wiff, still EXTREMELY sweet smelling wort with a hint of yeasty spice.
Clearly the yeast did something, judging by the amount of sediment and how white it is, so I assume that isn't just hot and cold break down there, but what do I know.
Now another day later, today, I opened it up and gave it a wiff, and it smells intensely of creamed corn, what I assume a horrible about of DMS smells like.
DMS isn't supposed to be a problem with extract, right???
Also it didn't smell like that before so I'm wondering if some weird bug is at play. I'm going to leave it to do it's thing, worst case I get a liter mason jar full of nasty funk.
