Yesterday I started a new project, a 100% wheat, wheat beer. chose to go with the dunkelweissen style cause thought itd give the best impression for this. now I know youre supposed to have a 50-50 or 75-25 or something ratio when making wheat beers, but had a surplus of wheat at the moment and I wanted to try this to see what happens. (for 1 gallon)

2lb german wheat
.2lb special b
.05 roasted barley

.1 oz perle @60
.1 oz perle @30
.1 oz perle @ 15

half package danstar munich classic yeast
 
Too more roasted malts. Too more wheat. Take a pils, Vienna or Munich instead of roasted barley.
 
Good luck mashing an 89% wheat based beer! Have you ever tried 60%? That's hard enough (stickiness). 89% would be a globby mess. I think even BIABers would struggle with it. I guess it's only a 1 gallon batch though, it's not like dealing with 10lbs of wheat.
