I added 8 oz dried cherries at the end of my boil. Racked wort off cherries into the fermenter. Didn't realize until after that the dried cherries contained sunflower oil. How bad will this affect the head retention? Will the oil, if any, rise to the top after fermentation? Will I be able to rack away from the oil? I've read that Russian river uses dried cherries with oil for supplication.
 
E-mail quote from Vinnie, "We have never found cherries that are not oil coated, we use them with the oil and know ahead of time we will lose some head retention."
 
A bit too late now, but in the future a hotter mash with more head-giving malts like crystal is a good way to counter the affect oil has on the head and skip the protein rest altogether (I never protein rest, actually)
