Over the past week I have switched to a three vessel all grain setup from extract. With extract I used distilled water and just allowed the minerals in the extract supply the mineral content to my water. However, with the recent alteration in technique I knew that would not work and I purchased Beersmith to help with water additions. Unfortunately, after brewing three batches I realized I have doubled my treatments. I treated 5 gallons of water with what I should have treated 10 gallons of water. Specifically, I treated 5 gallons of water with 18.2g gypsum, 2g table salt, 10g epsom salt, and 1g of calcium chloride. This mistake should result in a water profile of 227ppm Ca, 50ppm Mg, 41ppm Na, 697ppm SO4 and 100ppm Cl. Will almost 700ppm of SO4 ruin my beer? Also would that high of SO4 have any ill effects on my body? Thanks in advance for the advice.

I know that if you get too much Epsom salt in you, it can have a laxative effect but I don't know exactly what level that is. It's probably more than you have in your beer. However, I wouldn't chug a pint and go on a long car ride anywhere!

With those levels of minerals, I'd have a hard time drinking one. But it's all up to your tastes - you'll find out in a few weeks.
