OK, so this has probably been asked before and I am too lazy to search for it... but.......

what is the benefit of double-pitching (especially in high gravity beers)? I mean, if your yeast is healthy and if you arriate good, why would i want to ad more yeast?

The idea is to pitch an appropriate amount of yeast for the beer you are making.

Higher gravity wort requires more healthy yeast to ferment properly. If you are using a liquid yeast, you really ought to be making starters for most beers.
 
Keep in mind, they are referring to liquid yeast. If you use dry yeast you do not need a starter, just use two packs.
