Double pitching or larger starter?

I am looking at brewing a bigger brew. Another Grand Cru, OG 1.071. My last Grand Cru I pitched one packet of dry yeast, it came out great. AHS is recommending double pitching yeast. The yeast they recommend is WLP 500 Trappist Ale. Instead of dropping another 7 bucks, can I make a larger starter? I have a 1 liter and 2 liter flask and stirplate. Can I make a small starter and step it up a couple of times, or is buying two vials the way to go?

I am going to make a starter, would a 2 liter starter on a stirplate for a couple of days with one vial of yeast make up for double pitching?
