Grains:
1 lb crystal 20L
2 lb victory
Steeped at 145 degrees

Extract
7 lb light LME
3 lb light DME
2.5 lb sugar

Hops
2 oz Columbus 60 min
2 oz centennial 20 min
1 oz simcoe 15 min
1 oz amirallo 5 min
1 oz el derado dry hop 7 days

OG: 1.104

I'd say that's too much Victory and too much sugar for the style you're shooting for. I would use somewhere from a half to a full lb of Victory depending how "bread-y" you want your beer to taste. Probably no more than a lb of sugar to avoid getting a cider-y taste.
 
I agree with too much sugar. 1 pd is enough. Try 2 oz for dry hopping and I have had really good results with wyeast 1056. You grav will be pretty high and it can take it

I agree about the too much sugar. Also if your gravity is really gonna be over 1.1 you are gonna need a serious starter or multiple packets of dry yeast

Thanks for the feedback. My LHBS guy told me if it was under 25% of total feementables I won't have an issue. Im not saying he is right or wrong I took his word because he works full time at a local brewery troegs In Hershey pa. I will let everyone know how it turns out! Should I have it connected with a blowoff tube? Is it bad if I haven't had any action in my discharge bucket yet?

It's WAY too much victory, and definitely too much sugar.

The OG is too high, and the beer will probably stall/finish at a higher than desirable FG, even with that much simple sugar unfortunately.

The hops are good, but not enough for that high of an OG.
 
I forgot I also had 1 oz mosaic at 10 min. Would it help if I dry hopped more oz of hops?

Ok so after two days I am having a WILD fermentation. I did not use a starter. It started sometime last night. There are bubbles moving through my blow off tube really quickly and the water in the discharge bucket looks like it's boiling. I also had bubbles coming out of one side of the fermenter bucket too and it looks like it popped off a little bit so I snapped it back on. I had to move it into my basement because I keep my house at 68 and the temp in the bucket was 79. It is now sitting at 73. I will take a gravity reading tomorrow and post. Thank you everyone for the feedback. I will use less sugar and victory next time.

Just wanted to send an update. I will be bottling this weekend. I added 2 oz. of el derado hops for dry hopping. I think I can answer the question on here that I always see. The 2.5 lbs of sugar did NOT effect the taste of the beer at all. There is no taste of cideryness. My final gravity is sitting at 1.020. It has a great taste and finishes like an IPA should. No strong alcohol taste.
