Hey everyone, how to you think a Doppelbock with 100% Best Malz Dark Munich would turn out?

I'm concerned it wouldn't be malty enough. Do you think that's unfounded?

I brewed a Munich Dunkel with 75% of this malt before and it was fantastic.

Hops will either be Hallertau or Spalt Select.

Thanks for any input.
 
rshortt, did you ever do this? If so, what yeast did you use and how did it come out? I've done a SMaSH using dark Munich (10-12L), Ahtanum hops, and US-05 and it came out great. It tasted more like a lager than an ale, very smooth and malty with just a little bitter aftertaste.
