I brewed my doppelbock 2 1/2 weeks ago and it has almost finished fermenting. I used WLP833 German Bock yeast. I fermented around 50 (my fridge and controller kept it between 48-51). I want to give it a diacetyl rest. I plan to raise it to 58, but for how long? Then at what temp should i lager at and for how long?

I do a 48-72 hour diacetyl rest and then lager at 34F.

What was the OG? Some say that a good rule of thumb is 1 week per .010 of OG. So 1.080 would be 8 weeks of lagering. I would figure 2-3 months would be good for a dopplebock, especially since you have time until it is in "season" anyway.

I would raise it to about 65 F until you are about a degree plato within your forced ferment test. Assuming you didn't do a FFT, do one next time and for now figure a week at 65 will do it.

Lager as cold as you can (without freezing, you can probably get that doppelbock to 26F easily). Temperature is more important than time. Lager in a corny and carbonate while you lager. Taste at 2 weeks, 4 weeks, etc. You'll see how it changes over time and how long it takes to be good and where it peaks.
