I've been brewing for a while, but will consider myself a beginner forever :)

My first batch at the new house on a new propane burner resulted in some strong scorching.

It's drinkable, but the aftertaste is a killer.

The recipe can best be described as a honey IPA at about 7.5%.

Has anybody ever tried to age out the scorch flavor in the bottles? Curious if I should cellar it until summer or just keep drinking my mistake at the current pace.
 
I'd just keep drinking it, as IPAs don't age all that well. The hop aroma fades. Then you're left with a scorched bitter.

Get some good dark chocolate to go with it.
 
Ditto.. I can't stand the burnt flavor... I'd personally toss it. I really enjoy the process of making beer. So I just brew another batch and live and learn.
