So I have a high gravity beer that I didn't realize requires 2 to 3 times the yeast. Fermentation has kicked off without a hitch within the first 10 hours. And it is rolling hard-core. I'm in too small of a carboy and my 5 gallon batch is spewing Krausen out the blow off tube. So naturally I am losing yeast when I'm already probably too low.
I already ordered another tube of white labs California ale WLP 001 And will be here Tuesday. Would tossing this in a couple days into fermentation be a bad idea? Or should I just go ahead and do it? I don't wanna wait a month for fermentation to complete if the yeast amount was too low.
