I brewed up a batch of IPA and my efficiency was much higher than usual. I ended up with an OG of 1.071.. pushing into the IIPA range.

I rehydrated one package of US05 and I'm fermenting at 68. It's a 5 gallon batch... should I look into more yeast or let it ride?

You are pushing the limits with one pack US-05, but properly rehydrated I don't think you will have a problem.

You would have had a problem pitching one pack dry.

I think you're fine, but if you can add another pack or half pack that would be ok too. I did a 1.086 with one pack of us05 and it came out well. I fermented at 62F and it somewhat stalled at 1.030, but finished up after 10 days at 1.010. It was a fairly big beer. Good luck with it.

I humbly disagree you probably wouldn't have a problem pitching dry, and if your sanitary practices are good you'll definitely not have a problem pitching rehydrated. I say this because the 10 or so times I've used dry yeast for 5.5 gal batches I sprinkled it on and aerated with no problems. Cheers
