I posted a different thread about a "cornish" kinda taste.....the taste is hard to describe. That thread didn't really yield very much. So I am going to make it a little more broad of a question and start with that, so my question is....would a beer that is really hop forward hide DMS? Because I can detect this "odd" flavor in blonde fruit ales and cream ales.....but not in ANY IPA I have made. Also wasn't noticeable in either stout I have done.

No, not usually.

So I wonder what could be happening when I brew those other beers that is giving me this slight cornish taste.....when the IPA and stouts do not?

Maybe it's the grainbill? Are you using different ingredients (like pilsner malt) in the cream ale?

I use corn in my cream ale, and it's not really "corn" flavored or smelling, but it is definitely different than a non-adjunct ale.

DMS is corn, yes, but also more vegetal smelling, and can even smell like cooked cabbage.

The cream ale was pretty much half Pilsner and half 2 row with some flaked maize. The blonde ales didn't have pilsner malt at all.....and no flaked maize. The veggie smell or cabbage is definitely not what I am getting. I may have to seek out my local HB Club and see if any of them detect something.

I can't help with the source of the flavor but I would add that if it is DMS and if you keg, you can try scrubbing it with CO2. I've successfully used this in the past.

Hook up CO2 to beverage out, open the vent and slowly pump CO2 through it.

This won't work a miracle but if it's slight you might be able to help it.

Good luck.
