DIY thermowell and SS wall thickness?

Hey guys,

I'm preparing to build a temperature sensor to measure the temps in my MLT (very simple: NTC thermistor wired to a battery operated temperature meter I got from Hong Kong) and I have a question about the wall thickness of the 1/4" SS tubing I'll be using. The place I was planning on getting the stainless from only has it in 0.065" (1/16") thickness wall. Is that too thick to ensure proper heat exchange? I know I won't be using state of the art apparatus here...but I want something that will give me relatively proper temperature readings.

0.065" wall is pretty thick for a thermowell.

If you are going to be stirring your mash it may be good to have the extra robustness at the expense of instant temperature change reading.

Your temperature readings will be correct, it just may take a few minutes.
