so I have made several home brews at this point and always used the conditioning tabs which have worked fine. I bottled a batch a few days ago with priming sugar for the first time. I used 5oz for just over 4.5 gallons. I kept a small bottle a side to do a taste test the next day and it was completely carbonated, full head of foam and everything, less than 24 hours after bottling. I have 2 cases set a side and 2 of the bottles are plastic and rock hard. This makes me think maybe I used too much sugar and now I am worried about bottle bombs and over carbonation.
I am hoping it is just the yeast, fermentis wheat beer yeast which had a very fast fermentation.
Is this something I should be concerned about, or should I just leave it and see what happens?
