Anyone do a rest d rest after primary fementation is over with this yeast or is it not necessary because the yeast works at such high temps it cleans up everything in the process. I pitched one pack hornidal into 5.75 gal 1.072 OG neipa, fermented in my garage where it hit high 80’s low 90’s and finished yesterday, there’s a huge yeast cake on the bottom of the fermenter and zero bubbling so I’m assuming it’s done. I want to cold crash it to the high 50’s before dry hopping but I don’t wanna cool it down if it still needs to go through a d rest in the mid 70’s.
