I currently have an extract IPA in my secondary. I was going to bottle it last Sunday (2 days ago) as it had been in there for 2 weeks (following 1 week in primary). There was no visible activity in the form of bubbling via the airlock for almost the entire time that the brew has been in the secondary...but last night it started bubbling again. About ever 5-10 seconds there will be a bubble. Should I let it sit a bit longer?

Some background. I live in South Florida and have my AC on almost year round at about 70-72 degrees, so the temp in my house is relatively consistent. However, last Wed-Friday we experienced temperatures that dropped into the high 30's / low 40's at night and I woke up to a house that was in the mid 50's (old house - crappy insulation but its a rental :)). As a newb, I'm thinking that maybe this 20 degree temp swing could have had some impact on the beer? I was just surprised that I saw essentially zero activity for two weeks, but now I'm seeing some activity.

Lastly, the beer is much more cloudy than my first batch... and I would describe as looking yeasty. Just hazy. Any ideas for clarifying?

The only way to know for sure would be to take some hydrometer readings. If the reading doesn't change for several days you're good to bottle.

Personally I would definitely not bottle it if you see bubbling and haven't taken any readings. If you don't have a hydrometer you should pick one up or else let it sit at least another week IMO.

And yes, if you're seeing low temps like that it's very possible the yeast went dormant and are now working again as the temperature came back up. I would recommend trying some sort of temperature regulation with swings like those, maybe even just a swamp cooler.
