Delayed brew day considerations

I was going to brew today, but both SWMBO and I have been struck down with some sort of stomach bug.

My next chance to brew is going to be Saturday. Two questions about delaying the brew day:

1. I have 7 oz of pre-ground specialty grains in the fridge. Will they keep there until Saturday, or should I spend the extra dollar to buy fresh?

2. I have a starter going in the brew room closet. Can I keep it there with the sanatized foil over it, do I want to put on an airlock at this point, or should I put it in the fridge?
