I think they consider it a "maibock-style" beer, and they ferment cool, like at 60 degrees, using their proprietary Pacman yeast. It's maibock-ish, I guess. But definitely not a true Maibock.
 
what about using US-05 for dead guy? I had a buddy just try that and hes wondering if it was a mistake...

Pacman and 05 are both good attenuators with a relatively neutral profile...I would think your buddy's brew will be fine.

It will be a little different - but that's a good thing. :D
