Attempted my first partial mash yesterday. Epic brew day.

Took about twice as long as i figured it would. It is not easy bringing 5 gallons to boil on the stove.

Anyway,

I was aiming for 4.5 gallons ~1.051

I ended with closer to 3 gallons @ ~1.07

My question/ help needed

I pitched liquid English Ale Yeast WLP002. I picked this yeast because I wasnt expecting such a high gravity beer.

Would it be a bad idea to get a different yeast today, boil off a gallong of water with a tad DME. Create a yeast starter with it, and add that to the beer?

BTW, is an oatmeal stout
 
In retrospect you could have added some top off water to get back to your target OG.

If I were you I would just leave it alone and let it do its thing. WLP002 is a great yeast, I love it. Try and keep active fermentation in low 60s if you can. You will be happy.
 
Just for future reference, if you're above your starting gravity but below your starting volume, it's totally acceptable to add extra water before pitching your yeast to get closer to your intended gravity/volume.

I know I should have added water....but I had a date to make it to.

The yeast bottle says if its 1.07 that would be a problem, but because its a lower volume it should be fine?
