Tried to make something using date syrup, as apparently it works like a pseudo-candi syrup and leaves a nice belgiany taste. I'll be posting results and stuff as reference to anyone who wants to try using that ingredient, might be interesting. I'll post images when it's done since it's not anything special to look at right now: brown egg drop soup.

Extract
3 Litres

OG: ~1.105, my hydrometer doesn't go that high to check
target FG: 1.024
ABV standard: 10.6%
IBU tinseth: 49.5

500g Bress Golden Light DME
400g date syrup (brand was macro organic from Australian woolworths, has 60g sugar per 100g)

steeping grains:
10g roasted barley
75g crystal 100 (wanted this to be special b but the LHS was out)
25g crystal 60

hops:
5g enigma (18% AA) 60 mins (enigma is cheap where I live and high aa)
10g bramling cross (5% AA) dry hop

1/4 tablet whirlfloc

Lallemand windsor yeast
pitched at 22 degrees celsius
65% attenuation (low attenuation lets me fit more date syrup into the beer without drying it out too much)

Boiled the hops without the extract and syrup and added those in in the last 10 minutes since that's meant to reduce extracty tastes.

I have a few jars of date syrup and I've been wondering what to do with them. Most of the information I've found indicates that dates don't really add to much flavor or aroma.
The subject has come up several times here on HBT, here is a promising recipe where the OP stated the beer came out very good:

I think there would be no shortage of date flavor in this brew: most recipes I see online usually only throw a few ounces per gallon of dates, in, I've nearly got a pound of date syrup. Might be overkill.
 
It has reached 1.030 and isn't dropping so I bottled it. It has a good clear cola color. It needs a bit more time to truly open up but the date flavor is there, in a nice subtle way that blends with the malt. Alcohol is warming and clean like good spirits. Fruity orangey aroma that might come from the hops. So far I can really recommend the usage of date syrup.
 
I made two recipes with date syrup a while back, with a dose of 0.5 pounds of syrup per one-gallon batch. Neither turned out very date-flavored. I feel like the syrup added some wine-y notes mainly; maybe a little molasses or dark sugar, but not too much. I ended up drinking one batch and mostly dumping the other, not so much because it was bad as because it was boring.

Hope yours turns out (much) better!
