I have been "commissioned" by a friend to brew this delicious Belgian Blond. Has anyone attempted this one (all grain)? I've only seen one recipe, which is a partial grain and uses some ingredients which I know are wrong. Thanks!
The only ingredient I can suggest is the yeast. I use The Yeast Bay Dry Belgian, it is diastatic and attenuates 83-100%. It is also a high producer of glycerin so you get a silky mouth feel with a beer that finishes under 1.010.
I make a simple blonde ale as a starter for triples and quads, it's only 5.5% so low for the style, but I'm more after a sweet yeast cake. Hope this helps.
Never had it, would love to try it. Seems like the only thing setting it apart from other belgian blonds is the use of dried sweet orange peel. I would try the following and see how close you get
90% Belgian Pils
10% Sugar
15 IBUs Saaz @ 60 min.
3 IBUS Saaz @ 15 min.
1 oz. dried sweet orange peel @ 5 min.
WLP550 or WY3522
Targeting SG of 1.058 to finish at OG of 1.005
Single infusion mash @ 149 for 60 min.
Ferment @ 68-72F
