Hello, my local home brew store only carries crystal malt 40L. I have several recipes that call for higher crystal malt 60L and even 120L.
I had an idea, if a recipe calls for crystal 60L and the color is 6.2 srm. I use crystal 40L and enough chocolate malt to achieve the SRM's. Is this correct?, or how can i substitute these malts?

That's tough, because in addition to being different colors, they don't taste the same. Crystal 120L is raisiny and almost burnt sugar tasting, while 40L is light and sweet.

Chocolate malt has a roasty flavor, so there would be a different flavor using it in a beer that didn't call for it, although small amounts would be ok.
 
Order it online and have it shipped to you. Yooper is correct that while crystal 40, 60, and 120 all share the same name, they taste different. The only thing I can suggest is order it and have it delivered. Or talk to the shop owner and see if they can get you the different crystal that is required.
 
I would just use the 40 and not care about the srm for the 60.Chocolate will change the beer more in taste . I think toasting malt would work for color but also it wont be 60 or 120 in terms of taste.If you are that concered about color you could add a very little bit of black malt but i wouldnt even do that. Do you have any other malts on hand? I would use only recipes you have the ingedients for it will change the beer which can be a good thing sometimes probably not as good.Or just get help making a recipe with what you have if you cant order them.
 
Ask the shop owner to get it for you. Carefully hint that since you want this for a particular taste in your beer that if necessary you will order it online and to make the shipping more reasonable you will be doing a lot more ordering online and may not return. You may have to wait for the next order or you may have to order more than just a pound of C 60 for them to make a special order for you.

My LHBS was willing to order me a 50 lb sack of pale malt and a 10 lb sack of wheat malt delivered to the store for free if I could wait for the next order. It took a couple weeks to get it in.
