What do you think about a Belgian wit grain bill with the usual coriander and orange peel but with a heff yeast (3068 in particular).
Cross between Belgian wheat and hefe?

I just made one like that about 2 months ago. Check out my orange clove wheat and go from there.

How did it turn out? Did it taste more like a wit or a heff?
It tasted like both. It has the banana clove flavour of a wheat and the orange corriander flavour of a wit. I would switch the clove for some corriander in order to give more of a wit flavour. Mine is a little too clove flavoured for most people.

i have done basically just that for the past 2 summers. love it. watch that coriander though. its a beast !
