Kegged my batch this morning, got it down to 1.007 so it came out at a respectable 4.9%

Have it on 12 psi, I'll keep it there for a week and see how it turns out!

Had a little taste and it's quite nice, I'm sure it'll be even better cold and fizzy :)
 
My batch finally finished this week. But I'm wondering if I did something wrong. Overall I like the way it tastes, but I'm getting some notes of white wine in it, and I don't feel like that's right. Does anyone else know what I'm talking about?

That's how all my cream ale's turned out tasting like whenever i add rice and corn.

I'm not a wine drinker so I can't say that mine has the characteristics of white wine..... But my 6% version of this definitely has a dry fruity feel to it.
 
I am planning to brew a variation of this beer tomorrow and plan to throw in 0.5 lb of rice out of the box into my mash tun with my other grain. My question is will the rice cause any issue with sparging? are rice hulls needed to prevent a stuck sparge?
 
If it's minute rice like the recipe calls for I don't see a problem. It already calls for 1 lb of that so it will just up your abv. If it is raw rice I believe you need to do a cereal mash on that before going into the mash tun.

I've done it with and without rice hulls, and a bazooka screen, and never had it stick.

OK perfect. I have Kroger brand instant rice so I think that should work without the cereal mash as its just an off brand of minute rice.
 
seeking advice

I have all the ingredients but not the right hops

What I have:
Summit
chinook
ctz
crystal
cluster

what would you use?

Do to my isolation I cannot just go to LHBS and get other hops. I have close to a lb of each listed above so quantity of what I Have is not an issue just time getting others.

Cluster for sure. It is a hop that was used in the 19th centrury to brew this style of beer, but you can really use any hop you want, just try and stay away from the high AA% hops
 
Cool, so just replace the 1.00 oz Willamette (60 min) with cluster? Sounds good and I like the "true to style" of it.

Yup! I plan to do a 60 minute boil with 1oz of wlliamette and add .25oz of both cluster and wlliamette at flame out as I still have some left over in my freezer from a previous brew
 
This is my next brew for sure. With so many great reviews how could I pass it up?! I have a question though. With such a seemingly neutral flavor profile it seems like a great candidate to experiment a little bit with. I'm thinking of splitting my 5g batch and messing around with half of it. Since I'm planning on a 5min ½oz Citra addition (possibly Sorachi Ace instead) I was thinking some lime zest might compliment it well. Thoughts? I've also seen a recipe for a lime basil saison that intrigued me. Has anyone done such a thing? I don't know about amounts for sweet basil and how strong it comes across. I certainly don't want a basil forward flavor, just something in the background.

I have made this many times by the recipe.Good easy drinkier as it is.I have two 5 gallon batches fermenting now.I made it exactly by the recipe again only this time Im dry hopping with with either citra centennial or chinook separately to try different flavor profiles
 
So I just brewed my version of this and ended up with some crazy efficiency - target SG was 1.047 and ended up at 1.052. Will be pitching my yeast once it cools down to 65 degrees.
 
I brewed this this evening and made the rookie mistake of adding the hops right when the boil took off, instead if at the 60 min mark, am I going to notice this? If somewhat could I have done to correct it

That is the 60 minute mark.. you did it correctly.
 
I use Citra in mine. An ounce or 2 within 5 min left in the boil does wonders!!!


I have 1oz each of citra, mosaic and pacific jade... What would the best combo/use of these hops?

Every time I've made this it has been with noble hops. Want to try a different approach this time.

Mosiac/Citra hops are an awesome combo, especially in IPA's. There is a really good Deschutes’ Fresh Squeezed IPA Clone on the AHA website in which the recipe calls for this combo.
