So I'm making some cranberry apple wine, but I don't have a hydrometer and wanted a guess on how potent it will be.

First make some cranberry relish:
1 lb fresh cranberries
2 medium oranges
2 apples
2 cups sugar

put it all into the blender and blend it up good. If you want to eat this let it sit a few hours or the sugar will still be undissolved. It makes about 3 pounds or a little more.

Now measure out 2 pounds of this, this should leave enough for a cranberry pie or a side with dinner.

2 lbs cranberry relish
1 gallon of 100% apple juice
1 1/2 cups sugar
1 cup water
1 tbsp lemon juice
1 campden tablet
1/2 tsp Pectic enzyme
dry wine yeast


So what do you think, will it be :mug:, :tank:, or :drunk:?
 
For those that have never had cranberry pie and want to give it a shot, add a little cornstarch to the leftover cranberry relish. Then put it in a pie crust, homemade or store bought and bake at 350 for 15 minutes. Yum!
 
How many pounds of sugar total? Just that 1.5 cups? That's about .75 pound of sugar. Plus some sugar from the "relish"? About how much? If it's about 1/2 of the mixture, that would be about .5 pound of sugar.

You won't get much from the cranberries, apples, or oranges. Apple juice will give you about 1.045, and 1.25 pounds of sugar would be another 55-60 points. So, the OG should be about 1.100. Assuming it finishes as it should at .990, that's 16% or so. You'll need to rack the wine, and top up with water to reduce headspace, so you can probably plan on finishing at 14% or so.
 
I'm using 1/2 to 2/3 of the relish. but either way that will finish plenty high. Thanks

Any guess how long I should age it for best results?
 
Where can I find a list of sugar content of various fruit online? Is there a free service that can help me calculate a rough OG my self? I'll get a hydrometer this weekend, but it would help to build recipes, before I start putting it together. Thanks

There probably are. Maybe jackkeller.net has something like that. I only tend to use my own fruit, honey or sugar, and those are easy!
 
I just tasted the cranberry apple wine, it taste yummy. It was only the gravity reading, but still a tasty 4 oz.
