I was trying my first "non-kit" recipe because I keep throwing weird things in the kits and it always just tastes like the kit beer with a little....whatever.

Anyways, I adapted a Sour Cherry Ale recipe because I have 200g of cranberries and 600 g of raspberries (both frozen whole fruit) and no cherries. However I dumped my fruit in the primary w the wort, apparently with cherries you can do this, but with raspberries you shouldn't....good oversight. After 10 hours it's started ferment at a decent rate so I think I'll wait until the head falls in and then transfer to a secondary....

Suggestions and help....am I looking forward to ultra acid tart brew? I'll include the recipe so the pros can analyze my goof up.

500g of Munich grain steeped til 75C
2 Coopers LME "Ale"
25g of Northern Brewers Hops at 5 minutes
15g of Fuggles at 40 min
15g of Tett at 50 min
Cooled to 77C
Added rasp and cran and stir
Cool to around 24C, pitch yeast and pectic enzyme.
OG: 1.042

I tasted the wort and it's like a rich, ultrasweet raspberry syrup with a crazy hops b*tchslap that lasts for about 2 minutes. This could be good....or really bad.

Okay, too late now. I'll just rack it when primary fermentation is finished. It only took 8 hours to get bubbling and it's going hard....do I really want to mess with that?
