I've been making a peach cider from the Kirkland White Cranberry Peach juice blend at Costco. I gotta tell ya, it rocks. Here's the recipe:
5 or 6 gallons of Kirkland White Cranberry Peach juice blend from Costco
Montrachet wine yeast
Just pour the juice into a 6.5 gallon carboy, pitch the yeast, put the air lock on and wait. It'll ferment out to about 8% alcohol with no added sugar and will drop completely clear when its done without any fining. Once clear, just keg and carb like you would with anything else and enjoy.
Fermentation doesn't strip all the peach essence from it so it will have some peach nose and flavor when its ready to drink. It's tart but not ridiculously so and a couple of pints will do you right. Check it out.........
