I am looking to do a corona clone from Austin home brew. The yeast suggested is SA 23, I can ferment at 53 ok but for how long do I need to keep it at that temp and is 3 week primary ok. when you bottle condition a lager does it need to stay cool and for how long. I have been doing ales so far but my mexican co-workers want corona. Would a Kolsch yeast work and not change the flavor?:)
 
Flavor will definitely be different with a Kolsch yeast, but not too bad. I used Kolsch yeast in my Corona clone that I made for my mom and she liked it. It was hilarious in that the alcohol content was fairly high compared to Corona and it got her.
 
I use 34/70 lager yeast for my father in laws light lager. 34/70 would also be a good yeast.

I usually keep it in primary for 14 days.

When the Krausen starts to drop raise the temp to 60 for diacetyl rest.

I bottle carbonate at room temperature for 3 weeks and then lager for 3 weeks or longer.
