Been on a bit of a brewing hiatus due to two young children and moving multiple times. But the bug has bitten me again and I wanted to use up all my old ingredients while breaking in my process at the new house.

Batch Size: 5.5G
OG: 1.044
FG: 1.009
IBU: 26
SRM: 3.7

Fermentables:
  • 7lb Rahr 2-row
  • 1.5lb Flaked Corn
  • 1lb Viking Munich Malt
Hops:
  • 0.5 oz magnum @30
  • 1oz US Saaz @5
Yeast: Lallemand Koln Kolsch Yeast(Discontinued)

Fermentation Schedule:
  • 7 days @66
  • 2 days @72
  • Cold Crash to 38 for 2 days
  • Pressure transfer to serving keg with gelatin

A few firsts for me. I have fermented under pressure in the past with the Fermzilla All-Rounder. But the fermenter had been damaged in the move so I opted to ferment in one of my 6 Gal torpedo kegs. I did not cut the dip tube, nor use a floating dip tube. I must have gotten very lucky as I was able to transfer without clogs, and I am having a nice reasonably clear, fully carbonated pour 12 days out from brew day.

This has a couple more weeks to condition prior to the party it was brewed for, and I am really excited to see how it is around that time. Given the age of the grain, the out of date yeast, and lack of brewing over the last two years, I was prepared to dump it, but I am really happy with how it turned out so far.

It drinks quite clean with a subtle corn-pop like sweetness that I think plays quite well with the mild fruit esters from the Kolsch yeast. Will be brewing this again no doubt(will have to find a yeast replacement).

i take it you didn't harvest the yeast? I have 3 packs of this that we were given before it was made available to the public. Been in the fridge the whole time. Maybe i should get a brew going and freeze some yeast.

No this yeast sucks. If you find any I’ll dispose of it for you.


Seriously tho. No Kolsch dry yeast available on the market. Flocs better than liquid . Produces the absolute cleanest ale at 59 out there. Quicker than 2565 or 029. No starter needed. The only thing you sacrifice is slightly less ester than the other liquid yeasts but who wants esters in a kolsch anyway.
 
2565 is my house yeast and when I pitch at 55* I get no esters I can detect, with a stepped fermentation that ends at 64*. I've been overbuilding this pouch since 2017.
