when i was first reading a thread on here i saw someone mention that if they were to add some honey, or more refined sugars to their batches it may cut some of the sweetness.. is that because they are more fermentable than a typical dme/lme? i have made up a recipe for a hoppy wit beer, but i dont want it to be killer sweet, more like wheat mouthfeel and more of an amber/pale ale flavor.
 
oh yea! and i intend to add some lemongrass to add a little greeny citrus flavor in toward the end? would you steep it at flameout? or secondary? what type of yeast might i use for a concoction like this?
