This is my thirds homebrew I have done. It's a octoberfest and in the cooling of the wart I ended up sealing it off and pitching my yeast this morning because it got late and the wart was not cool enough. I kept it in a sealed up fermenter to cool overnight. Has anyone else done this? And did your beer turn out alright?

I've never done it, but a lot of people have, and have reported that their beer turns out just fine.

You may get a little more chill haze (cloudiness) as a result of the slow cooling, but that's about it.

You'll be fine. I wouldn't wait much longer than 24 hours though, or the other bugs in there will get a head start on the yeast.

For cooling wort I have once run into the same situation you did. The beer turned out fine.

There is a bit more risk of infection setting in but there are many brewers that do no chill routinely.

I don't think you have anything to worry about

I've done it before, same situation - got too late, had to wait.
beer turned out fine, but chill haze was an issue.
