Made this the other night. My girlfriend showed me a picture in a food magazine of someone who made meatloaf in to cake pans and dressed it up like a cake. ketchup between the layers and mashed potatoes around the outside like icing. Since i was just cooking for my roomate and myself i made "cupcakes" basially any meatloaf in a muffin tray with mashed potatoes on the top drizzled with bbq sauce.

Exact Recipe:

Ingrediens for meatloaf:
1.5 lbs ground beef
1/2 cup shredded cheddar
1 cup plain bread crumbs
1/2 cup (or more to desired consistency) your favorite BBQ sauce
1/2 onion finely diced
4 cloves finely chopped garlic
5 or so chopped pickled cherry peppers (seeds included)
1 Tbs salt / pepper
2 eggs

Mix all ingredients together and add equal amounts to a prepared muffin tray
bake at 400 for around 25 minutes.

Ingredients for Mashed Potatoes:
1 pound Red potatoes
1/2 cup milk (or more depending on desired consistency)
1/4 cup shredded cheddar
2-4 Tbs Ricotta (or more depending on desired consistency)

wash potatoes and leave skins on
boil potatoes for a around 18 - 20 minutes
chop potatoes into quarters and place into bowl
mix in cheddar and mash with a potato masher
slowly add milk and ricotta and continue mixing to desired consistency
(heat the milk if desired)



when done remove meatloaf cupcakes by flipping the tray over onto a cutting board.

spoon healthy amount of mashed potatoes onto cupcake and drizzle with some additional bbq sauce.

to manly it up some more add some of your favorite hot sauce!

ok ok ok....I'll edit my post probably tomorrow. cuz thursday is left overs night for me and i have a few cupcakes left over....I'll be sure to share pictures from now on hehe.

He was a manly sex icon???That is just sick. What was wrong with you all?

My mom used to make something similar only it was lined with bread dough.

In muffin tins there was the bread dough pressed into the tins, and then a lump of meat mixture pushed into the middle, covered with cheese. They were awesome!
