I am hoping you guys can offer a bit of assistance. I've decided to give the 20A 120v ebiab with a 2000W element a shot and have a question on the control panel side of things.

Disclaimer: I've done a bunch of wiring / soldering of sub-components based on schematics. i'm feel comfortable doing the work relying on the schematic as my guide, and intend to spend a bunch of time with a volt meter prior to getting the plug close to the outlet

the schematic provided is one that was done by PJ so I have no doubt it is sound and correct. The only issue I have is wire size. I am unsure what all needs the 12 gauge and where I can down size the wire.

Would anyone be able to help get me pointed in the right direction.

Check out the primer, I think there is good learning there.

I started with the primer before I got underway with the project (a while ago now) thanks for pointing it out I forgot it was there. I'll go back and re-read.
 
On this drawing you can downsize the wiring anywhere after a fuse, as that prevents it from drawing too much.
