I have 5 jars of Kombucha on the go at the moment. All made from the same scoby. I realized the weather has been really cold the past few weeks and so the temperature has slowed or possibly halted the fermentation but I've done what I can to warm the jars up now.
They're still in the first fermentation (2 weeks because of the temperature issue) but are showing very different results even though all have been stored and treated the same.
-The scobies in two of them is sitting at the bottom of the jars and not a lot has happened in terms of fermentation. (No new scoby growing, not much change in taste)
- The other 3 appear to have over fermented where they are very fizzy and strong flavored not vinegary though.
-All of them are very cloudy
-One of them has a strange white growth on top which I would like to know if it is mold or not (attached)
So I guess my question is why are the jars doing different things and are any of these sounding unhealthy?
